A majestic Sicillian white wine. Composed of Verdejo, and Grillo grape varieties. The Grillo is harvested in 3 different harvests and the Verdejo is harvested with a low sugar concentration. Using low-intervention and heritage farming methods, the grapes are pressed with the feet and fermented with indigenous yeasts. With maceration on the skins for 5-10 days and aged from 6 to 12 months in barrique and tonneau. Notes of white fruits and Marsala light notes. This is a very special wine and has amassed a bit of a following.
